ANY sexual contact and/or skin to skin contact can catch an STD...
this includes everything from kissing (mouth sores/cold sores are herpes) to actual acts of sex

condoms only cover the penis shaft and vaginal walls - so they have NO use against syphilis, warts, herpes or crabs (some others too)

I'll tackle the last part of your question. Confidential HIV testing just means that they'll keep your test results "confidential" - although in many places this still means that they forward your name to the state and/or county, and it can mean that they give the results to your insurance. So honestly, I'm not sure that "confidential" means much these days. Anonymous testing means that you don't give your name - so they can't give your name to anyone else. You won't get a sheet of paper that says you are clean, but they also can't / won't forward your name along to anyone else if you test positive.

are you just talking about HIV?- if so it is a bloodbourne virus- young children can get it, and some other STDs before they are born- or through contact while being born. They can also get it from contact with contaminated blood. Best protection does not limit itself to just sex- use latex gloves when dealing with blood or fluids, don't use others needles, don't get tattoos piercings from non-professionals or unclean shops- basically don't handle blood or other bodily fluids carelessly.
The difference between confidential and anonymous testing is the Dr./ nurse knows the name of the person they are testing, they just don't publicly share the results- it is information kept between you and them- anonymous testing means that the dr./nurse does not know your name or info
